The grapes are harvested in October, vinified and fermented on the skins in stainless steel tanks for about two weeks without using any barrels, and then aged for two years. After bottling, the wine is aged in the bottle for one year. \\about Vigna 生産者について// イル チェンソ Il Censo ガルガノ一家は代々、シチリアのパレルモとアグリジェントの間にある町パラッツォ アドリアーノ(映画ニューシネマパラダイスの舞台)に所有する土地で、小麦の栽培と家畜の放牧をしていました。パラッツォ アドリアーノは500年以上に渡るブドウ栽培の歴史がありますが、シチリアの他の土地に比べると作業効率の悪い土地だったため、ワイン生産地としては日の目を見なかった場所でした。ガエターノ ガルガノの叔母は土地の一部を使ってワインを造っていたそうで、そのワインがとても質が高かったことなどもあり、いつしか自分でブドウ栽培をしたいとガエターノ ガルガノは考えていました。 ローマ在住でプログラマーをやっていたガエターノは2010年に5haの土地にブドウを植え、ワイナリーとしての活動を開始します。ジャンピエロとは30年来の友人という事で、ブドウを植える場所の選定からラベルまで一貫して“ベア プロデュース”になります。畑は標高700m、ブドウ以外にも様々な作物が植えられ、常に風が吹いているので病害が発生しづらく、彼らの理想とする有機的な農法に適した環境といえます。今後は小麦を栽培しパスタを作り、もともとこのあたりの名産でもあるナッツ類の生産も考えています。 For generations, the Gargano family grew wheat and herded livestock on their land in Palazzo Adriano, a town between Palermo and Agrigento in Sicily (the setting of the movie New Cinema Paradise). Palazzo Adriano has over 500 years of viticultural history, but it has never seen the light of day as a wine-growing region because it was less efficient than other areas in Sicily. Gaetano Gargano's aunt used part of the land to make wine, and the quality of the wine was so good that Gaetano Gargano decided he wanted to grow his own grapes. In 2010, Gaetano, a programmer living in Rome, planted grapes on 5 hectares of land and started working as a winery. He and Giampiero have been friends for 30 years, and the entire process, from the selection of the vineyard site to the label, is "Bear Produce". The vineyard is 700 meters above sea level, where various crops are planted in addition to grapes, and where the wind is always blowing, making it difficult for disease to occur, which is ideal for their organic farming methods. In the future, they plan to grow wheat, make pasta, and produce nuts, a specialty of the area.
