Fermented in cement tanks under maceration for approximately 2 weeks. After racking, the wine is returned to cement tanks for 6 months. After bottling, the wine is laid down for one month before release. \\about Vigna 生産者について// シチリア島の東南部ヴィットーリアで、2004年ヴィンテージより彗星のごとくイタリアワイン界にデビューしたアリアンナ オッキピンティ。そのころの彼女に大きな影響を与えたのはフランク・コーネリッセンの過激ともいえるワイン哲学であった。その哲学を引き継ぐようなワイン造りを当初は行っていたが、その後、彼女の天賦の才であるコミュニケーション能力により華麗なるも充実した多くの国々の生産者との交わりにより近年は理想の追求だけではなく実践的で円熟味を増したワイン造りに進化しており、ヴィットーリアという地域を表現した普遍的な素晴らしいワインを産み出している。 ブドウだけで25ヘクタール、オリーヴで16ヘクタールの栽培面積があり、自社農園で栽培した食物を使い、オリーヴオイル、パスタ、ケイパーの塩漬け、ジャム、ハチミツなどの食品も生産している。 Arianna Occhipinti made her debut in the Italian wine world with the 2004 vintage in Vittoria in the south-east of Sicily. At that time, she was greatly influenced by the radical wine philosophy of Frank Cornelissen. She initially made wines in the tradition of that philosophy, but her natural talent for communication and her contacts with producers in many countries has enabled her to evolve in recent years into a winemaker who is not only pursuing ideals, but is also practical and mature, and who is able to produce universal wines that express the region of Vittoria. The wines are universal and excellent expressions of the Vittoria region. With 25 hectares of grapes alone and 16 hectares of olives, the estate also produces food products such as olive oil, pasta, salted capers, jams and honey using food grown on the estate.
