With 80% destemmed and 20% whole cluster the berries went into big oak fermenter and went through fermentation in 10 days. After 14 days more skin contact the wine reposed after pressing in 300 l used oak barrels in our old natural loess cellar with a constant temperature of 14° C. The wine was blended and bottled without any filtration and fining with just a little amount of sulfur. \\about Vigna 生産者について// Schödl シェードル Niederösterreich – Weinviertel https://schoedlfamily.at オーストリア東部、ニーダエスタライヒ州、ヴァインフィアテルにて若き3兄弟マティアス、ビクトリア、レオンハルトが営むワイナリー。代々ワイン造りをしていたわけではないが、祖父母が保有していた畑ではブドウを栽培しており、それを彼らの両親が受け継ぎ、趣味の一環として管理していた。また、父親は元々オーストリア最古のワイン醸造学校の教師をしていたため、近所のワイナリーからの相談を受ける機会も多かった。このような環境下で育った彼らはいつしかワインの道へ進む決断をし、醸造学校を卒業後、南アフリカ、カリフォルニア、ニューヨーク、ニュージーランドでの研修を経て帰国。2019年にオーガニック認証取得、現在はビオディナミ農法を取り入れ、環境に配慮したワイン造りを日々模索中。ぶどう畑には羊を放牧させ、ハーブや草、カモミールなども一緒に生えており、蝶やてんとう虫、ミミズが暮らしやすい環境を整えている。これにより、土壌が活性化され、病害に強いブドウを作ることができるそうだ。 “In Natura”シリーズはノンフィルター、亜硫酸は無添加、もしくは瓶詰時のみ少量添加で、オーガニック認証取得と同じく2019年より開始。 畑はロイデスタール、ブルーメンタール、シュタインベルクに位置し、20ha保有のうち、ワイン用畑は13ha。年間生産量50,000-60,000本。レス（黄土）、ローム土壌。 The winery is run by three young brothers Matthias, Viktoria and Leonhard in Weinviertel, Niederösterreich, eastern Austria. Although they have not been winemakers for generations, their parents inherited their grandparents' vineyards and managed them as a hobby. In addition, their father was originally a teacher at Austria's oldest winemaking school, so he was often consulted by neighboring wineries. After graduating from the winemaking school, they studied in South Africa, California, New York, and New Zealand before returning to Austria. In 2019, he obtained organic certification. Sheep are allowed to graze in the vineyards, and herbs, grasses, and chamomile grow with them, creating an environment where butterflies, ladybugs, and worms can easily live. This helps to revitalize the soil and make the grapes more resistant to disease. The "In Natura" series is unfiltered, with no sulfites added or a small amount added only at bottling, and will start in 2019, as will the organic certification.
