The average age of the vines is about 45 years, hand-picked, 18 hours skin contact. Fermentation in stainless steel tanks (60%), ceramic egg tanks (30%) and Slovenian oak barrels (10%) with wild yeasts (2 months). The wine was then aged on the lees for another 8 months in stainless steel tanks. The wine was bottled with a small amount of SO2. Non-filtered, no fining agents used. As its distinctive label design suggests, the fruit is as juicy as a melon or ripe apple. But the grapes from the old vines, averaging 45 years old, give the wine texture and a tangy spiciness that is impressive. The young brothers, Damon and Jonathan, who grew up in the area, used their domestic and international experience to take on a new challenge: making natural wine from their own vineyards. The concept behind their winemaking is quite simple: "All quality comes from the vineyard. All the grapes from their own vineyards, which express the terroir of the Clare Valley, are naturally fermented with wild yeasts and produced with minimal human intervention, such as minimal S02 addition, no fining and no filtering.
