Hand-picked, selected, crushed, destemmed, pressed, and transferred to glass demijohns for fermentation until 8 g/l residual sugar, then bottled unfiltered and without antioxidants. \\about Vigneron 生産者について// マルティン・ヴァイチュネル Martin Vajčner ぶどう栽培に長い伝統を持つ家系に生まれたマルティン。スロバキアからチェコのモラヴィアに移り住んだ祖父がワイン造りをし始めたことからマルティンのワイン人生が始まる。小さな頃から祖父のワインに対する香りなどの英才教育をうけ、育ったマルティンは、ワイン生産者になるべく、チェコ唯一のワイン高校に進み、ソムリエの技術を学ぶためにホスピタリティマネジメント大学を卒業。卒業後、中央検査試験農業研究所(ビオ認証機関)に勤務し、ワイン部門で新品種や外国品種の栽培試験を行い、ワインの優劣を検出することなどに従事。2015年にツアーとワインテイスティングを提供する会社を友人とを設立。ワインの生産も始めたのをきっかけに、テロワールを最大限に表現したワインを造りたいと考え、2018年の終わりごろ、会社を辞め、自身のワイナリーを設立。ワイン造りに時間を掛け、自分のぶどうを栽培することを夢見て2019年にやっと最初のワインをリリースする。 Martin was born into a family with a long tradition of viticulture. Martin's life in wine began when his grandfather moved from Slovakia to Moravia in the Czech Republic and started making wine. From a young age, Martín grew up with his grandfather's gifted education in wine aromas, etc. To become a winemaker, he went to the only wine high school in the Czech Republic and graduated from the University of Hospitality Management to study sommelier skills. After graduation, he worked at the Central Institute for Inspection, Testing, and Agricultural Research (a bio-certification organization), where he worked in the wine department, testing new and foreign varieties to detect superiority in wine, etc. In 2015, he and a friend founded a company offering tours and wine tastings. When he also started producing wine, he decided to leave the company and found his own winery in late 2018, in order to make wines that express the terroir to the fullest. He will finally release his first wine in 2019 after spending time making wine and dreaming of growing his own grapes.
