The wine is then bottled without clarification or filtering and with no added sulphites. It’s a fresh and zippy expression of the grape, with enticing citrus, orchard fruit and herbal notes which linger on the palate. He says Pascal Simonutti, from whom he studied winemaking, is "a god to me". His younger sister is a painter and her paintings are on display in the winery.
