After hand harvest and selection, the Syrah and Grenache grapes were partially destemmed, macerated for 20 days, and fermented and aged in old oak barrels. The Touriga Nacional and Cinsaut grapes were macerated for several days in whole bunches, then fermented and aged in stainless steel tanks to bring out their freshness and fruitiness. Wine is a passion he has been able to turn into a career. While pursuing his Master's degree in Theology, he completed the WSET Level 3 course. After this he was fortunate enough to work for a well-known importer, Great Domaine. After working at Great Domaines, Chris managed and co-owned the Hawk + Schoon wine store, opened the newly installed Publik Wine Bar for David Cope, and worked at Mullineux & Leeu Family Wines. He now runs Culture Wine Bar and has also launched Pounding Grape Imported Wines. All of our producers farm organically and/or biodynamically. This is very important to us because the true expression of a grape begins with the soil it is rooted in. There are more soil microorganisms in a teaspoon of healthy soil than there are people on the planet. The expression of healthy soil is as important to the wine as the grapes on display in the bottle.
