The grapes were hand harvested, sorted, crushed, and skin-fermented for 5 days with whole clusters. The grapes were then pressed and transferred to concrete egg tanks where they were fermented and aged on sur lie for 5 months. Wine is a passion he has been able to turn into a career. While pursuing his Master's degree in Theology, he completed the WSET Level 3 course. After this he was fortunate enough to work for a well-known importer, Great Domaine. After working at Great Domaines, Chris managed and co-owned the Hawk + Schoon wine store, opened the newly installed Publik Wine Bar for David Cope, and worked at Mullineux & Leeu Family Wines. He now runs Culture Wine Bar and has also launched Pounding Grape Imported Wines. All of our producers farm organically and/or biodynamically. This is very important to us because the true expression of a grape begins with the soil it is rooted in. There are more soil microorganisms in a teaspoon of healthy soil than there are people on the planet. The expression of healthy soil is as important to the wine as the grapes on display in the bottle.
