From 2021, the fermentation is switched to cold fermentation for a fresher taste. \\about Vigneron 生産者について// Les Justices / Sophie Kurdziel & Clément Maire レ・ジュスティス / ソフィー・キュルジエル&クレモン・メール ロワール河中流、アンジュ・ソミュール地域の南東部、ソミュールを拠点とするワイナリー。 南仏出身のクレマンが主に畑を担当し、モーゼル出身のソフィーが主に醸造を主導で行っている。 ソフィーはノルマンディーでの生活時にシードルの美味しさに触れ醸造家を目指し、モンペリエ大学で二人は出会う。 2009年にモンペリエ大学でワイン技術者国家免状（DNO）を修得後、アメリカやニュージーランドでの研修を経て、2011年にロワールへ移住。 ワイナリーや醸造関連企業に数年勤務し、2018年にシノンのカベルネ・フランの古樹の畑を購入する機会に恵まれワイナリーをスタート。 珊瑚などの化石が眠る砂利と粘土と石灰岩の合計2ヘクタールの畑を所有し、シュナンブラン、シャルドネ、グロロ・グリ、カベルネフラン、カベルネソーヴィニヨンを栽培。 南向きの日照に優れた丘陵地の畑は除草剤、化学肥料、有機肥料さえも一切使用しない自然農法で栽培。 クローバーやマスタードなどの野草を野放しにて肥料にあて、耕作も馬を使い昔ながらの農作業を行っています。 2021からクロ・ルジャール、デ・ロッシュ・ヌーヴ、アントワンヌ・サンゼイの畑に隣接したポワイユのカベルネフランの畑を1/2ヘクタールを取得。 AOCソミュール・シャンピニーを取得しパルサンブルをリリース。 ソフィーとクレマンはひとつのキュヴェに対していくつかの醸造を試し、テロワールを一番表現出来る醸造を選択。 異なる醸造を組み合わせることで生まれる深みのある表現を探求しています。 グラスファイバータンクでの発酵を主としながら、近年は敢えて焼き付けなしの新樽発酵を用いたり、使用年数の違う樽での掛け合わせをしたりと試行錯誤しながら研鑽を積んでいます。 エチケットは友人のアーティストや姉妹に依頼するなど、アーティスト肌の家族や友人に恵まれたワイナリーです。 The winery is based in Saumur, in the south-east of the Anjou-Saumur region, in the middle reaches of the Loire River. Clément, from the south of France, is mainly in charge of the vineyards, while Sophie, from the Moselle, is mainly in charge of the vinification. Sophie discovered the delicacy of ciders while living in Normandy and aspired to become an oenologist, and the two met at Montpellier University. After completing her National Diploma of Wine Technician (DNO) at Montpellier University in 2009, Sophie trained in the USA and New Zealand before moving to the Loire in 2011. After working for several years in wineries and oenology-related companies, they took the opportunity to buy an old vineyard of Cabernet Franc in Chinon in 2018 and started a winery. He owns a total of 2 hectares of gravel, clay and limestone, where coral and other fossils lie, and grows Chenin Blanc, Chardonnay, Grolleau Gris, Cabernet Franc and Cabernet Sauvignon. The south-facing, sunny hillside vineyards are cultivated using natural farming methods without the use of herbicides, chemical fertilisers or even organic fertilisers. Wildflowers such as clover and mustard are left out in the open to fertilise the vineyards, and the ploughing is carried out in the traditional way using horses. From 2021, 1/2 hectare of Cabernet Franc vineyard in Poillet adjacent to the Clos Rougeard, Des Roches Neuve and Antoine Sanzay vineyards was acquired. Acquired AOC Saumur Champigny and released Pulsambre. Sophie and Clément experiment with several vinifications for a single cuvée and choose the one that best expresses the terroir. They explore the depth of expression that can be achieved by combining different vinifications. While mainly fermented in glass fibre tanks, in recent years they have been experimenting with fermentation in new oak barrels without baking, or using barrels of different ages. The winery is blessed with family and friends with an artist's touch, with the etiquettes commissioned from a friend's artist and sisters.
