The tannins are integrated, with a lingering berry sauce-like finish. \\about Vigneron 生産者について// ​Les Vignes d’Olivier from Languedoc ​レ・ヴィーニュ・ド・オリヴィエ 大学時代、法律を学びながらニースの人気自然派カーヴ、ラ・パー・デ・ザンジュで働いていたオリヴィエは、その後いくつかの生産者たちから栽培、醸造を学んだ後、2014年に自身のドメーヌを立ち上げました。家族や友人、先輩生産者や知人など多くの人の力を集結させ、初ヴィンテージから素晴らしいセンスを見せ、あっという間にラングドックの自然派ワインに欠かせない存在となりました。 ワインが美味しいのはもちろんですが、底抜けに明るい性格もまた魅力で、彼の周りにはいつも人が集まってしまう、まさに太陽のような存在として自然派ワインの世界を盛り上げています。 ​ 栽培や醸造は、ティエリー・アルマンやフィリップ・ヴァレット、フレデリック・リヴァトンなどで修業をした経験を活かし８つの区画に分かれた7.5haをほぼ一人で管理をしています。標高が高く北向きの区画が多いことから南ながら綺麗な酸を表現できる素晴らしい畑も彼の味方となっています。 ​ オリヴィエのワインの特徴は彼の陽気さが乗り移ったかのような溌溂とした果実味と綺麗な酸、そしてどのワインにも共通して感じる ミネラル感たっぷりの旨味です。この旨味がしっかりとした骨格を形成しています。 ジュースのように飲みやすく気軽なタッチでも、少し寝かせると、この旨味がじわじわとワインに深みを与えていきます。明るく陽気な性格ながら、芯は真面目で努力家、沢山のことを素直に吸収できる実直さ。味わいは彼の人柄を表しています。 During his university years, Olivier studied law and worked at La Par des Anges, a popular natural wine caves in Nice, before learning viticulture and vinification from several producers, before setting up his own estate in 2014. By bringing together many people - family, friends, senior producers and acquaintances - he showed great flair from the first vintage and quickly became an integral part of the Languedoc's natural wine scene. His wines are of course delicious, but he also has a very cheerful personality, and people always gather around him, making him a sunshine figure in the world of natural wine. He has trained with Thierry Armand, Philippe Vallet and Frédéric Rivaton, among others, and is almost single-handedly responsible for the cultivation and vinification of his 7.5 ha, divided into eight parcels. The high altitude and the north-facing parcels are on his side, as well as the excellent vineyards, which express a beautiful acidity despite their southern aspect. Olivier's wines are characterised by their lively fruitiness, which seems to have been transferred from his sunny personality, and their beautiful acidity. The wines are full of minerality. This flavour forms a solid structure. The wine is easy-drinking and easy-going, like a juice, but when laid down for a while, this umami gradually gives the wine depth. He is bright and jovial, but at his core he is serious and hard-working, with an honesty that allows him to absorb a lot of things in a straightforward manner. The taste expresses his personality.
