After pressing in a horizontal press, the wine is fermented and aged without oak barrels. \\about Vigneron 生産者について// UGO LESTELLE ユーゴ　レステル リヨン出身のユーゴは13歳の頃から葡萄栽培に携わり、将来自身でワイン造りをすることに、なんの疑いもなく生きてきた。醸造・栽培の学校でBTSの資格を取得後、ジョルジュ・デコンブ、イヴォン・メトラ、フレデリック・コサールで厳しい修業時代を過ごし、2015年ユーゴが24歳の時にSaint-Chinianの2.5ha畑を購入。ガレージワインから自身のキャリアをスタートさせ、現在では10haの畑を所有する。人工的なものを介入させず、自然に配慮した環境から生まれる葡萄こそがピュアでエネルギー溢れるワインを造りだすと信じている。醸造に関する哲学も明快で、無添加でかつ欠陥のない美しいワインを志している。 Ugo, a native of Lyon, has been involved in viticulture since the age of 13 and has never doubted his future in winemaking himself. After obtaining his BTS certification at an oenology and viticulture school, Hugo spent a rigorous apprenticeship at Georges Decombe, Yvon Metra, and Frédéric Cossard before purchasing a 2.5 ha vineyard in Saint-Chinian in 2015 when he was 24 years old. He started his own career with garage wines and now owns 10 ha of vineyards. He believes that grapes produced in a natural environment, with no artificial intervention, produce wines with purity and energy. He has a clear philosophy on winemaking, and his aim is to create beautiful wines without additives and without defects.
