【内容量 NET】750ml 【産地 region】ドイツ ファルツ Pfalz, Germany 【品種 variety】Pinot Noir ピノ・ノワール 40%、Cardonnay シャルドネ 38%、Pinot Blanc ピノ・ブラン 22% 【タイプ type】白・泡 white, sparkling 【醸造 vinification】 使用されたワインの55%は2019年ビンテージで残りの45%は2018年のリザーブワイン。ブドウを傷つけないため収穫時にはブドウを小型のバスケットに入れて運び、プレスにはブドウを落とさずに置く形で移し、非常に軽くプレス。タイユのみを使用。 プレス後は24時間ステンレスで静置。その後、228Lのバリック（6～7年使用）に移し自然発酵及び乳酸発酵。 12ヶ月後にアサンブラージュし、リザーブワインとともにステンレスタンクへ移し３ヶ月静置。 ティラージュ後、38ヶ月瓶内熟成。2024年1月にデゴルジュマン。 ドサージュ：1.5g 使用されたワインの55%は2019年ビンテージで残りの45%は2018年のリザーブワイン。ブドウを傷つけないため収穫時にはブドウを小型のバスケットに入れて運び、プレスにはブドウを落とさずに置く形で移し、非常に軽くプレス。タイユのみを使用。 プレス後は24時間ステンレスで静置。その後、228Lのバリック（6～7年使用）に移し自然発酵及び乳酸発酵。 12ヶ月後にアサンブラージュし、リザーブワインとともにステンレスタンクへ移し３ヶ月静置。 ティラージュ後、38ヶ月瓶内熟成。2024年1月にデゴルジュマン。 ドサージュ：1.5g \\about Vigneron 生産者について// Dennis Wolf デニス・ウォルフ デニスは、ファルツ最北端の街グロースカールバッハに拠点を置き、ウォルフ家の6代目当主に当たる。4代目までは協同組合にブドウを販売していたが、デニスの父親クルトはワインに特化したいと いう気持ちが強く、1988年に元詰めを開始した。ワイナリーを経営する30年の中で、父親は12haまで畑を拡大したが、それはデニスにとって機械化されたワイン生産であり、心から共感できるワインではなかった。 デニスは新世界と旧世界で研修を重ねたが、ワインが常に食と共にあるフランスのワイン造りはデニスにとって憧れと同時に模範ともなった。一度、ドイツに戻り、ガイゼンハイムの醸造学校で学び始めたが、商業的なワイン造りのための理論や技術が中心の授業はデニスが求めるものではなかった。一方、実家のワイナリー経営が難航していることを知っていたデニスは、親からワイナリーを継承する決断をした。デニスが掲げた不介入主義的なアプローチに対し、両親は懐疑的であったが、2018年のファーストリリース以降、デニスのワインは多くの人に知られるようになり、経営はすぐに安定の兆しを見せた。 しかし、30年かけてワイナリーを立ち上げた両親の尊厳と、極めて短期間に成功を収めたデニスの斬新なアプローチはやがて両者間に軋轢を生むようになる。デニスと両親の間の溝は深まるばかりで、ワイナリーではお互いの顔も見なくなるようになった。そのような生活からの脱却を決意したデニスは、「ウォルフ」 というワイナリーの経営を断念し、所有していた畑も売却した。その知らせは、周囲の多くの人々を悲しませることとなったが、ワイン造りに対するデニスの強い意志は今後また別の土地で開花することになるだろう。2021年がデニスのラストビンテージとなった。 Dennis is based in Großkarlbach, the northernmost town in the Pfalz, and is the sixth generation head of the Wolff family; until the fourth generation, they sold grapes to cooperatives, but Dennis' father Kurt was keen to specialise in wine and started bottling in 1988. In his 30 years of running the winery, his father expanded the vineyard to 12 ha, but this was mechanised wine production for Dennis, and not wine he could truly identify with. Dennis trained in the New World and the Old World, but it was French winemaking, where wine is always accompanied by food, that Dennis both admired and emulated. Once back in Germany, he began his studies at the oenology school in Geisenheim, but the theory and technique-oriented classes for commercial winemaking were not what Denis was looking for. Meanwhile, knowing that his family's winery business was struggling, Dennis made the decision to take over the winery from his parents. Although his parents were sceptical about Dennis' non-interventionist approach, after the first release in 2018, Dennis' wines became more widely known and the business soon showed signs of stability. However, the dignity of his parents, who spent 30 years establishing the winery, and Dennis' innovative approach to success in a very short time soon began to cause friction between them. The rift between Denis and his parents only deepened and they no longer even saw each other at the winery. Determined to move on from such a life, Dennis gave up running the 'Wolff' winery and sold the vineyards he owned. The news saddened many people around him, but Dennis' strong will for winemaking will blossom elsewhere in the future. 2021 was Dennis' last vintage.
