Half of the grapes are macerated carbonic at low temperature, the rest are directly pressed and vinified separately. The two are combined during the ageing stage and bottled in early spring. Pneumatic pressing for 2 hours. 10 months in fibre tanks. \\from Importer インポーターコメント// やや淡い赤色でタッチは葡萄由来の明るいタッチで野イチゴやジャム系のニュアンスで酸もしっかりとしており詰まった果実味にシルキーなタンニンと抜け感のいい酸がありながら、しなやかなテクスチャーが感じられます。 \\about Vigneron 生産者について// Domaine les Aricoques ドメーヌ・レ・アリコック 高校時代の親友であったRomain DupontとGuillaume Bellonによって設立された期待の新規生産者。 Romainはワイナリーで働き、Guillaumeはソムリエとしてレストランで働きはじめる。その後二人の理想的なワイン造りを実現させるべく、冷涼で有機栽培が可能なサヴォワに移住。4.8haの畑を購入し、Romainは栽培を担当、Guillaumeは販売を担当し醸造に関しては二人で話し合って決めるという形態をとる事とした。 醸造に関しては野性酵母で発酵させ、人為的加入はほとんど行わない、またシャンパーニュのジャックセロスの息子との大の仲良しで、熟成に使用している樽はセロス家から毎年引き継いでいる。 サヴォワという土地でしか表現できないグランヴァンを目指しており、その志高さや品質が多くの評論家から評価され、フランス国内では入手困難な生産者の一人となりつつある。 A promising new producer, founded by Romain Dupont and Guillaume Bellon, who were close friends in high school. Romain worked in the winery and Guillaume began working in restaurants as a sommelier. They moved to Savoie, a cooler, more organically grown area, in order to realise their ideal winemaking style. 4.8 ha of vineyards were purchased, with Romain in charge of cultivation and Guillaume in charge of sales, and they decided to discuss and decide on the vinification. The vinification is fermented with wild yeasts, with little artificial intervention, and they are good friends with the son of Jacques Seros of Champagne, and the barrels they use for ageing are inherited from the Seros family every year. He aims to make a grand vin that can only be expressed in the Savoie region, and is becoming one of the hardest producers to find in France, as his ambition and quality have been recognised by many critics.
