The acidity gives the wine a light touch, leaving a good impression of plump and youthful fruit, while the fullness and richness of the umami can be felt in the gentle dry finish. \\about Vigneron 生産者について// レ・ヴィーニュ・ド・ババスのセバスチャン・デルヴューとは同じ村に住んでおり、中学時代からの友人です。収穫などの季節労働をしているうちに、少しづつ葡萄栽培と醸造に興味をもつようになり、ジョー・ピトンのところで15年間働き、有機栽培を間近で見ながら栽培長として活躍しました。葡萄畑の仕事をきっちり行い土が生きるようにすることが大切で、その結果が良いワインに繋がるということを学んだと語っていました。 1995年に奥さんのローレと醸造学校で知り合い、1997年に1樽のワインを二人で造ったのが一番最初です。その後、ジョーピトンのところで働きながら、手入れの行き届いていなかった16areaの古い区画を2002年に購入し、2〜3年畑を休ませてから葡萄を植え、自家用のワイン造りをしていました。2016年が生産者として自分達のワインを造ったスタートの年となります。2019年まではブルノー・ルヴォワのところで週3日働きながら自社の仕事を並行して行っていました。彼は有機栽培の人ではないですが、昔からの友人でファブリスのことをよく知っており、彼のことを考えて農薬散布などの薬に関わる仕事は一切させませんし、農薬を撒いた後にはファブリスの畑に入らないように気をつけてくれたりと気を遣ってくれます。ブルノーが短時間で働いてくれる人を探していたため仕事を手伝っていましたが、2020年にガレージから新しいカーヴへ移り現在は自分の畑と醸造のみに専念しています。 これまで所有していたサンロンベールの0.5haの2区画に加え、2018年には新たにロシュフォールに約10年の若い樹齢のものから約100年の樹齢までのシュナン・ブランで構成される4〜5区画の1.2ha、更に2019年にサンロンベールに約1haのガメイ、グロローなどの畑を借り、現在トータル2.6haとなっています。今後の彼らのワイン造りに大いに期待が高まります。 He lives in the same village as Sebastien Delveu of Les Vignes de Babas and has been friends with him since middle school. He doesn't let him do any work that involves pesticide spraying or other medicines, and he's very careful not to go into Fabrice's vineyard after spraying pesticides. In 2020, he moved from the garage to a new cave and is now focusing solely on his own vineyards and vinification. In addition to the two 0.5 hectare parcels in St. Lombard that they previously owned, in 2018 they added a new 1.2 hectare parcel in Rochefort consisting of 4-5 parcels of Chenin Blanc ranging in age from about 10 years young to about 100 years old, and in 2019 they leased about 1 hectare of vineyards in St. Lombard including Gamay and Grolleau. In addition, in 2019, they will lease a 1 hectare vineyard in St. Lombard for Gamay, Grolleau, etc., bringing their total vineyard size to 2.6 hectares.
