The vineyard, located closest to the Gambier volcano, is planted on limestone and volcanic ash soils. The grapes were harvested whole, crushed by hand, and given a very short skin contact before pressing. Fermented in stainless steel tanks with wild yeasts, then aged in French oak barrels (3-5 years old) for 8 months with MLF. Non-filtered, no fining agents used. Alc. 13.2% \\about Winery ワイナリーについて// Good Intentions Wine / グッド・インテンションズ・ワイン (Mount Gambier, SA) Good Intentions Wine / グッド・インテンションズ・ワインを他と明確に違える要素は何よりその土地。南オーストラリア州のみならず、オーストラリア全体で見ても特異な「火山性土壌」は産地の名前にもなっているガンビア火山に由来するもので、大地そのものを感じさせるような彼らのワインに共通する強いミネラル感は、そのテロワールを表現した結果としてワインに現れます。 マウント・ガンビアを愛するAndrew Burchell / アンドリュー・バーチェルによって 2014 年にスタートした「Good Intentions Wine /グット・インテンションズ・ワイン」。マウント・ガンビアは冷涼な気候と石灰岩や火山灰といった特異な地質から注目を集めており、2010 年に GI 認定された比較的新しい産地。アンドリューのワインへ向き合う姿勢は自然への敬意と人間味に溢れたもので、自由な発想を楽しむ現代的なオージーそのもの。醗酵は全て野生酵母。ボトリング前のごく僅かな酸化防止剤以外の添加物は使用しません。また栽培や醸造中に電子機器による分析を行わず、一切を自らの五感によって判断しています。 Good Intentions Wine の理念は「自分たちで 100％有機栽培したブドウを用いて、マウント・ガンビアのテロワールが現れた個性的かつ“クリーン”なナチュラルワインを表現すること」であり、そのために現在 6.5ha の自社畑（買いブドウもある）の管理、コルクへの仕様変更、一部ワインへの極少量のSO2添加（無添加の場合はリリースまでしっかり熟成期間をとる）といった方針に踏み切っています。 What sets Good Intentions Wine apart from others is, above all, the land. The volcanic soil, which is unique not only in South Australia but also in Australia as a whole, is derived from the Gambier volcano, which gives the region its name. The strong minerality that is common in their wines, which gives a sense of the earth itself, is the result of the expression of this terroir. Good Intentions Wine was started in 2014 by Andrew Burchell, who loves Mount Gambier. Mount Gambier is a relatively new region, having received GI certification in 2010, and is attracting attention for its cool climate and unique geology of limestone and volcanic ash. Andrew's approach to wine is one of respect for nature and humanity, and he is a modern Aussie who enjoys free thinking. All fermentation is by wild yeast. No additives are used except for a very small amount of antioxidants before bottling. No electronic analysis is used during cultivation or vinification, and all decisions are based on the senses. Good Intentions Wine's philosophy is to use 100% organically grown grapes to produce unique and "clean" natural wines that express the terroir of Mount Gambier. In order to achieve this goal, we are currently managing our own 6.5 hectare vineyard (some grapes are purchased), changing the specification of cork, and adding a small amount of wine to some of our wines.
