The harvested Gewurz was gently crushed with children's feet and stored at low temperature. The wine was then mixed with Riesling using wild yeasts. After about 7 weeks of skin contact, the wine was pressed and aged in stainless steel tanks and old French oak barrels. No antioxidants added, non-filtered, no fining agents used. A juicy orange wine accented with peachiness and the presence of phenols. Alc. 12.5% \\about Winery ワイナリーについて// EKLEIPSIS / エクリプシス Waipara, New Zealand 2015 年設立 established in 2015 Winemaker : Jessica Mavromatis / ジェシカ・マヴロマティス ニュージーランド南島、ノース・カンタベリーのワイパラで 2015年に始まった 「Ekleipsis / エクリプシス」。その「蝕」を意味する名前(ギリシャ語)の通り、 2015年4月の皆既月食の日に収穫されたブドウから始まったナチュラルワイン のレーベルで、ワインメーカーは同じくワイパラのワイナリーCrater Rim、そして Dom Maxwell (2018 Winemaker of the Year に輝いた醸造家)の下で経験を 積んだ女性醸造家 Jessica Mavromatis / ジェシカ(ジェス)・マヴロマティス。 ビオロジック/ビオディナミ農法によって育てられた単一畑のワイパラ産ブドウ(エ クリプシスの母体である Muddy Water / Greystonの自社畑)から、極力添加物を使用しない最低限の人的介入アプローチによって造られます。また、”Ekleipsis” はギリシャ語で「手放す/不在」などを意味する場合もあることから、ジェスのワイン造りに対する姿勢の一側面を表しているとも言えます。 Ekleipsis was launched in 2015 in Waipara, North Canterbury, South Island, New Zealand. The winemaker is Jessica Maxwell, a female winemaker who has worked for Crater Rim, another Waipara winery, and Dom Maxwell (2018 Winemaker of the Year). The winemaker is Jessica Mavromatis, who has worked for Crater Rim, another Waipara winery, and Dom Maxwell (2018 Winemaker of the Year). The wine is made from single vineyard Waipara grapes (from Muddy Water/Greyston's own vineyards, the parent company of Ekleipsis), grown biologically and biodynamically, using a minimal human intervention approach with as few additives as possible. Ekleipsis" is a Greek word that can also mean "letting go" or "absence", which is an aspect of Jess's approach to winemaking.
