Dry farming. Bush vines. After hand-picking and sorting, 70% of the grapes were whole-cluster pressed and fermented in stainless steel tanks (at 14°C) and 300 liter old oak barrels, then aged on lees for about 6 months. The remaining 30% of the grapes were fermented with whole bunches for 4 weeks (skin fermentation), pressed, and aged on lees in stainless steel tanks and 300 liter barrels for about 5 months. (Overall ratio: 90% in stainless steel tanks, 10% in old barrels). He is a wonderful producer who makes wines with charm and finesse that are unimaginable from the outside. He received his degree in oenology and viticulture from Elsenberg College. He then studied the fundamentals of winemaking, especially Pinot Noir and Chardonnay, in California's Napa Valley, Central Coast, and New Zealand. In 2008, he returned to South Africa to take on the role of head winemaker and viticulturist at a small winery in Tarbach, where he won numerous awards. From 2010 to the present, he has been head winemaker and winemaker of his own brand of wine at Mount Abora in Swartland.
