The finish adds depth to the bright, concentrated, fruity fruit with an extended drinking experience. \\about winery ワイナリーについて// フランソワ・オーブリー（ラ・フォンチュード） Francois Aubry – La Fontude パリで環境アドバイザーをしていたFrancoi Aubryフランソワ オーブリーは、年老いた両親が余生をのんびりと過ごすことのできる土地を探し続け、ようやく2003年に格好の場所を見つけて移住しました。 ラングドックの中心に位置するサラグーの谷にある、放棄された森と30haに及ぶ牧草地、そして3.5haの小さなブドウ畑も付いた土地です。自分たちの仕事は環境と祖先の遺産、そして動植物たちによって成り立っていると考えるオーブリーは、これ以上はないほど自然に恵まれたこの土地が有する多様性を余すことなく発揮できるよう、遺産を守るように森と牧草地の状態を再生させて来ました。 長年の薬剤投与によって荒れ果てたブドウ畑は、カリニャン、サンソー、アラモン、テレブラン、そしてグルナッシュ。どれも樹齢が古く収穫量が少ない固有種で、その効率の悪さのため抜かれる運命にあったブドウです。この畑をバイオダイナミクスで栽培、使う農薬は少量の銅と硫黄のみで、他はハーヴと調剤を散布すること10年、ようやく畑の土は柔らかくなり沢山の虫や草花が畑に戻って来ました。 オーブリーは、牧草地に羊を放牧しています。羊たちは豪雨、猛暑と厳寒期を除き、基本的に年間を通して外で育てられています。従って、出産も外で行われ冬から春にかけて子羊が元気に外を飛び回る姿を観ることもできるようです。 ＊ワイン造りにおける重要な仕事の大半は畑にあると考えており、完熟で摘みシンプルに醸造することを心がけています。 Francois Aubry, an environmental advisor in Paris, was searching for a place where his elderly parents could spend the rest of their days relaxing, and finally found the right place in 2003. The property is located in the Saragou valley, in the heart of the Languedoc, with abandoned forests, 30 hectares of meadows, and a small vineyard of 3.5 hectares. Aubry, who believes that his work is dependent on the environment, his ancestral heritage, and the flora and fauna of the area, has restored the forest and meadows to a heritage-preserving state, so that the diversity of the land, which could not be more naturally endowed, can be fully exploited. The vineyards, ravaged by years of chemical treatment, are made up of Carignan, Cinsault, Aramon, Terre Blanc, and Grenache. All are old, low-yielding, endemic grapes that were doomed to be pulled out due to their inefficiency. After 10 years of biodynamic cultivation of the vineyard, using only small amounts of copper and sulfur, and spraying with herbs and preparations, the soil has finally softened and many insects and flowers have returned to the vineyard. Aubrey grazes his sheep on pastureland. The sheep are raised outside basically all year round, except during periods of heavy rain, heat and cold. Therefore, births also take place outside, and it is possible to see the lambs flying around outside in the winter and spring. We believe that most of the important work in winemaking is done in the vineyards, and we try to pick the grapes at full ripeness and vinify them simply.
