Hand harvested in 10kg baskets to prevent crushing of the grapes by the weight. Maceration for 3 days. No piage or racking. Fermentation in stainless steel tanks without temperature control. Then 10 months in bottle. No degorgesmant. No filtration, no collage, no SO2 added. \\about Vigneron 生産者について// ドメーヌ・イン・ブラック DOMAINE IN BLACK　 ランバート･スピルマンがアルザスのサンピエールで2019にスタートした2haのドメーヌ。ブドウ畑のほとんどは隣のコミューンEpfigに位置する。2016年からEpfigのドメーヌ・イヴス・アンベルグで働くことになり、2017年から2018年の間にドメーヌで働きながらブドウ栽培醸造資格を取得。開業前に、Dorlisheimのクリストフ・リンデンローブの下でこれまで学んだことを補完し、2019年3月にイヴス・アンベルグから８区画(1.5ha)、フロリアン・ベック・ハートウェグから1区画のブドウ畑を借りてドメーヌをスタートしました。 今の自分があるのはここで仕事ができたからだと、未だに週2日ドメーヌ・イヴス・アンベルグで働いている。 認証は取得していないがビオディナミ農法を実践。ブドウは手作業で収穫、人の手の介入は無くし、無添加、ノンフィルター、ノンコラージュ。ワインの操作はすべて重力によって行い、瓶詰めも手作業。 Lambert Spielmann started this 2ha estate in 2019 in Saint Pierre, Alsace. Most of the vineyards are located in the neighboring commune Epfig.He started working at Domaine Ives Amberg in Epfig in 2016 and obtained his viticulture and oenology certification while working at the domaine between 2017 and 2018. Before opening, I complemented what I had learned so far under Christoph Lindenlaub at Dorlisheim and started the estate in March 2019 with 8 parcels (1.5 ha) from Ives Amberg and 1 vineyard parcel from Florian Beck Hartweg. He still works two days a week at Domaine Ives Amberg, saying that he is where he is today because he was able to work here. He practices biodynamic farming, although he is not certified. Grapes are harvested by hand, with no human intervention, no additives, no filtering, and no collage. All wine manipulation is done by gravity, and bottling is also done by hand.
