【内容量 Net】750ml 【産地 region】フランス ブルゴーニュ　Bourgogne, France 【品種 variety】ピノノワール Pinot Noir 100％（樹齢 50年、Morey St. Denis 南東と En Valendons の畑） 【タイプ type】赤 red 【製造 vinification】 100％除梗 セメント槽発酵、醸し21日間 古小樽熟成 SO2 無添加 100% destemmed Fermentation in cement tanks, 21 days of vinification Aged in old small oak barrels, no SO2 added. \\about Viticultor 生産者について// ドメーヌ・バロラン Domaine Ballorin フランス・ブルゴーニュ Bourgogne, France 2005年よりジル・バロラン氏によって始まったドメーヌです。当初からビオディナミを実践し、現在は5.5haを耕作。トラクター以外は手作業で畑を整備します。当然なことながら、ナチュラルナワインを造るには、良い葡萄を造る事、そしてその為には土壌の微生物や畑の植物、昆虫、の役割が大切で、そのバランスをとることが人間の役割であると言います。土壌の要素をしっかり吸い上げる、酵母が健全に存在できる、そんな畑にするためにビオディナミが大切です。葡萄が完熟していれば補糖は必要ありませんし、健全なぶどうがあれば、自然に発酵は起こります。腐敗果を入れないよう、撰果は大切で、収穫時と撰果台で２回行います。 白はダイレクトプレスで600Lの樽で発酵、古小樽で熟成。赤は除梗し、しばらく破砕せずに発酵が始まるのを待ちます。発酵が始まったら足でやさしくピジャージュし、ルモンタージュを行います。バトナージュやスーティラージュ（滓引き）は行わず、ウイヤージュはきっちり行います。 The estate was started by Gilles Barolin in 2005. The estate has been biodynamic since the beginning and currently cultivates 5.5 hectares. Except for a tractor, the vineyard is maintained by hand. Naturally, in order to make natural wines, it is important to produce good grapes, and to do so, the role of soil microorganisms, vineyard plants, and insects is important, and the role of humans is to balance these factors. Biodynamic winemaking is important in order to create vineyards that can absorb soil elements and allow for the healthy presence of yeast. If the grapes are fully ripe, no supplemental sugar is needed, and if the grapes are healthy, fermentation will occur naturally. The grapes are picked twice, once at harvest and once on the winery table, to prevent rot. The whites are direct pressed and fermented in 600L barrels and aged in old small oak barrels. The reds are destemmed and allowed to ferment without crushing for a while. Once fermentation begins, the wine is gently pigeared and remontaged by foot. No batonnage or soutillage is done, but ouillage is done thoroughly.
