Vinification is done with as little human intervention as possible. The grapes are destemmed and macerated for one month to preserve the fresh fruit flavors. Non-collage, non-filtered, no SO2 added. \\about Vigneron 生産者について// ラングドック地方アディッサンで独自のワインを造り出しているレミ・プジョルはラングドックで最も尊敬されるヴィニュロンの一人。６haの畑でカリニャン、グルナッシュ、シラーを中心に栽培。土地に根付いたブドウ、ワインの特徴を決める天然酵母、土壌を可能な限り尊重して維持することが植物の健康に繋がり、結果的に生産者にも報酬をもたらすと彼は考える。ブドウが機械から受けるストレスを減らすため手作業で収穫するが、収穫時期は近年の糖度を測る方式はとらず、種が茶色くなりアーモンドの味がした時に収穫を行う。 Remi Poujol is one of the most respected vignerons in Languedoc, producing his own wines in Adissant, Languedoc. 6 hectares of vineyards are planted mainly with Carignan, Grenache and Syrah. He believes that grapes that are rooted in the land, natural yeasts that determine the character of the wine, and respecting and maintaining the soil as much as possible will lead to the health of the plants, which in turn will bring rewards to the grower. The grapes are harvested by hand to reduce the stress the grapes are subjected to from the machines, and the harvest is done when the seeds turn brown and taste like almonds, instead of the recent method of measuring the sugar content.
