【内容量 NET】750ml 【産地 vineyard】フランス France /アルザス Alsace 【使用品種 variety】Riesling リースリング 【タイプ type】オレンジ Orange 栽培家ピレール・アイシュ氏からブドウを購入。 WAZENは彼の持つアムルシュヴィール村にある区画の名前。 2020年は発酵が残糖4.5g/L残った状態で発酵が止まったが、糖と酸のバランスがとれていたため、そのまま瓶詰、 再発酵のリスクが高いため、2020年は王冠を使用。 手摘みにて収穫。 収穫後、全房プヌマティックプレスにて8時間のプレス。 その後ステンレスタンク にて6ヶ月熟成。 プレス機内で12時間のスキンコンタクト。 フィルターなし。 Grapes are purchased from grower Pierre Aiche. WAZEN is the name of his parcel in the village of Amourcheville. In 2020, fermentation stopped with 4.5 g/L of residual sugar remaining, but the sugar and acidity were in good balance, so the wine was bottled as is. The grapes were harvested by hand. After harvest, the whole bunch was pressed for 8 hours in a pneumatic press. Then aged in stainless steel tanks for 6 months. 12 hours of skin contact in the press. Unfiltered. \\about Vigneron 生産者について// Jerome Francois ジェローム・フランソワ Alsace, France フランス・アルザス 当主のジェローム(26歳)は高校卒業と同時に大工の道に進んだ。しかしワイン愛好家であった祖父の影響を強く受け、ワイン造りを志すようになる。 アルザスのCFPPAで醸造・栽培の資格を取得後、2014年に自身が生まれ育った家にワイナリーを立ち上げる。彼の大叔父が残した納屋を自身でリフォームしカーブに変え、0.5haしかなかった畑は現在6haまで増えた。2017年にCFPPAの同級生であるヤン・ビュリーが共同経営者として加わる。 自然と地元をこよなく愛し、土地の個性が強くでるワイン造りを目標とし、その方法としてビオディナミ農法を選択、馬などの動物や自然の力を借りて、ほとんどの時間を畑作業に費やす。 また「テロワールは品種を凌駕する」という言葉を強く信じ、彼の作り出すワインは従来のアルザスワインと違い、品種をエチケットに表記せず、コンプランタッションまたはアッサンブラージュにより、土地ごと区画ごとに醸造される。 The owner, Jérôme (26 years old), started his career as a carpenter upon graduating from high school. However, he was strongly influenced by his grandfather, who was a wine enthusiast, and decided to become a winemaker. After obtaining his oenology and viticulture certifications from the CFPPA in Alsace, he set up his own winery in 2014 in the house where he was born and raised. In 2017, his CFPPA classmate Jan Bury joined him as a co-owner. He loves nature and his hometown, and his goal is to make wine with a strong local character, which he does by biodynamic farming, spending most of his time in the vineyards with the help of horses and other animals and nature. He also strongly believes in the saying that "terroir is more important than variety," and unlike conventional Alsace wines, his wines are not labeled with the variety on the etiquet, but are vinified on a parcel-by-parcel basis, using a compellation or assemblage method.
