The grapes were hand-picked, selected, crushed, skin-fermented for 2 to 3 weeks with 70% whole clusters and 30% destemmed, pressed, fermented separately in stainless steel tanks, and aged sur lie. He then trained at Schloss Gobelsburg and other Austrian wineries, experienced the 2016-2018 harvest at Johann Mayer, and returned to Austria to help his parents' winery and set up his own wine, Nibiru, with his wife, Julia. Josef's desire for winemaking to be free, unfixed, and moving in only one direction over a long period of time led him to superimpose "Nibiru," the only planet that orbits the sun in a long cycle in the opposite direction, with the style he was striving for, and to name the winery after it. The logo on the bottle is taken from the symbol of the Celts who lived around Kamptal in the past, meaning cycle (natural environment), and represents his belief that nature is healthy, sustainable, and cyclical.
