Like rock salt that brings out the flavor of the ingredients! \\about Vigna 生産者について// フォリアス・デ・バコ FOLIAS DE BACO ヨーロッパ西端。大西洋テロワールに「新しい味」が産まれていた! 【幼いころからの夢を叶え、ついに独立】 幼い時から祖父が畑で作業するのを見ていたティアゴは、当時から明確にぶどう栽培、ワイン造りをしたいと強く思っていた! 普通の高校に行く傍ら、農業専門校を並行履修。大学でも栽培・醸造、さらには農業エンジニアを勉強。その後オレゴンで5年栽培・醸造経験を積み博士号を獲得。満を持して、2007年にポルトガル・ドウロへ帰り、祖父母が大切に守ってきた畑を自社畑として復活させた!フォリアス・デ・バコとは『バッカス神の楽しい宴』という意味。 【現代醸造技術を使い、伝統の足踏みも貫く】 人為的介入は最低限。多くの場合グラップ・アンティエールでラガール(ドウロの伝統的な桶)で軽く踏んだり、ほとんど破砕せずに醸造。現代醸造技術の知識も思慮深く使いながら、伝統を大事にしている。野生酵母のみを使い、赤はドウロの伝統の混植混醸。単一畑になんと25品種以上が植えられている! 彼の畑はドウロのサブ・ゾーン、シマ・コルゴの最標(550m~700m)で、冷涼さのある場所。最高標高で、ここはドウロなのにポルト造りが認められていないほど冷涼。表土の浅いシスト土壌で石がごろごろした畑や、花崗岩質土壌も一部にあり、ドウロの中でも最も痩せた土壌。 自然をリスペクトする栽培方法を行うことで、地元の人からは高品質ワインは造れないと思われてきたこの環境でこそ、自分の造りたい、フレッシュで、土地のミネラルを感じられるワインが造れると確信。信じた道を邁進している! Thiago had watched his grandfather working in the vineyards since he was a child, and from that time on, he had a strong desire to grow grapes and make wine! While attending a normal high school, Thiago also attended an agricultural school. He also studied viticulture, winemaking, and even agricultural engineering at university. He then spent five years in Oregon, gaining experience in viticulture and winemaking and earning a Ph. In 2007, he returned to Douro, Portugal, and restored the vineyard that his grandparents had carefully protected as their own vineyard! The name "Foliás de Baco" means "Bacchus' Delightful Banquet. The winery uses modern winemaking techniques and follows the traditional footsteps. Artificial intervention is minimal. In many cases, the grapes are vinified in grappe entière with light treading in lagares (traditional vats of the Douro) and little crushing. The wines are made with a thoughtful use of knowledge of modern winemaking techniques, while still respecting tradition. Using only wild yeasts, the reds are made from mixed vines in the tradition of the Douro. Over 25 varieties are planted in a single vineyard! His vineyard is the highest point (550m-700m) in the subzone of the Douro, Cima Corgo, where it is cooler. It is the highest altitude and is so cool that even though this is the Douro, port making is not allowed here. The vineyards have shallow schist soils with stony topsoil and some granitic soils, which are the thinnest soils in the Douro. By respecting nature, he was convinced that he could produce the fresh, mineral wines that he wanted to make in this environment, which had been considered by locals to be incapable of producing high quality wines.
