The Riesling grapes from the granite and clay soils were pressed and fermented and matured in foudres for 18 months. \\about Vigneron 生産者について// Christian Binner クリスチャン・ビネール アルザス地方のコルマールよりすぐ北のAmmerschwihrという村に位置するDomaine Binnerは1770年からワイン造りを行っている、非常に名門の家族です。 醸造に関しては農業本来の姿をモットーとして、無農薬を徹底し、SO2もほとんど使用し ておりません。今でこそ無農薬のスタイルが見直されておりますが、お父様の時代には化学 肥料がもてはやされた頃でした。その時代にもかたくなに一貫して無農薬の農業を続けま した。まわりの人に変わっていると散々言われましたが、このスタイルを一貫して守り続けた 造り主です。収穫も手で行っている為、家族だけで手入れが出来る11haの畑を大切に 守っております。アルザスでは決して大きな造り主ではありませんが、先祖代々から大切に 受け継がれた財産は、カーブの中1つとってもうかがえます。 まず古いヴィンテージのワインが数多くストックとして残っており、アイテムが多い為に各ス トック場所がCaveの地図で管理されているのです。歩いていると偶然1955年のリースリング を発見、珍しいヴィンテージなので、譲ってくれないかと申し出たら瓶を見せてくれて、「目減 りがすごいので譲りたいが残念ながら出来ない」と、品質に関する徹底した姿勢が伺えまし た(実際は大丈夫な程度なものですが...)。 Binner家のワインの味わいはウルトラ自然、一度飲んだら誰でも忘れることが出来ない 程、印象的な香りと厚みとエレガンスを備えたスーパーワイン。看板商品です。アルザスリー スリングと言えば、ビネールと言われる程、最近ではお陰様にも認知度もあがって参りまし た。こういうワインを扱わさせて頂く事に誇りを感じます。(新井順子さん) Located in the village of Ammerschwihr, just north of Colmar in Alsace, Domaine Binner is a very prestigious family that has been making wine since 1770. The family has been making wine since 1770, and their motto for winemaking is the true nature of agriculture, using no pesticides and almost no SO2. Although the pesticide-free style is being reevaluated nowadays, in his father's time, chemical fertilizers were in vogue. Even during that time, he continued to farm consistently without pesticides. People around him often said he was strange, but he consistently kept this style of farming. He harvests the grapes by hand and carefully protects his 11 hectares of vineyards that can be tended only by his family.
