＊おひとりさま一点までのご案内です。One bottle per person. 【内容量 Net】750ml 【産地 region】フランス ブルゴーニュ　Bourgogne, France 【品種 variety】シャルドネ Chardonnay 100％ 【タイプ type】白 white 栽培面積：12.45ヘクタール 平均樹齢：20年 土壌：石の多い粘土石灰質 畑の位置：東向きの丘の中腹 ドメーヌの村名シャブリは、Les Beaumontsレ・ボーモンのリュー・ディの3つの区画のブドウから造られます。その他の村名シャブリの区画のブドウは全量ネゴシアンに売却されています。 ブドウは完熟を待って手摘みで収穫し、その場ですぐに選果。ブドウは全房圧搾で、ゆっくりと時間をかけて（3時間半）圧搾されます。その後、10～12時間かけて前清澄。アルコール発酵は野生酵母のみで温度管理機能付きのタンクで、3ヶ月近くをかけて自然にゆっくりと行われます。マロラクティック発酵も自発的にスタートさせて、完全に行います。 熟成は、引き続きタンクでシュール・リーの状態で行われます。熟成期間は15～18ヶ月。熟成期間に澱引きを1回行って、ワインを空気に触れさせ、瓶詰め前に各ロットをアッサンブラ－ジュして、自然清澄。その後、無濾過、もしくは珪藻土で軽く濾過を行って瓶詰め。 引き締まった印象で、香りの快活さ、透明感、そしてぞくぞくする複雑な味わいの層といった、偉大なブルゴーニュの白ワインの愛好家がシャブリに求めるほぼ全てを備えている。鼻腔でも口中でもとてもジューシーで、果肉を思わせる質感と核果実がフレッシュなミネラル感と共に存在し、カキの殻や熟したグレープフルーツの風味が溢れ出すフィニッシュへと誘う。冷えた白い果実が押し寄せ、口中ではこのレベルのワインにしては非常にドラマチックだが、モローの畑がこのワインに与えた石や花のような新鮮さによって包まれ、撫でられているかのよう。このワインは古風ながらとてもモダンな部分も兼ね備えている。良質な酸と果実味、そしてテロワールが感じられるワイン。甲殻類の料理やフライ料理、白身肉の料理などと一緒に召し上がると良いでしょう。 Area planted: 12.45 hectares. Average age of vines: 20 years. Soil: Stony clay-limestone. Vineyard location: east-facing hillside. The estate's village Chablis is made from grapes from three parcels in the Rieus d'I in Les Beaumonts Les Beaumonts. All the grapes from the other village-name Chablis parcels are sold to the negociants. The grapes are harvested by hand, waiting for full ripeness, and sorted immediately on the spot. The grapes are whole-cluster pressed slowly and slowly (3½ hours). The grapes are then pre-fined for 10-12 hours. Alcoholic fermentation takes place spontaneously and slowly over nearly three months in temperature-controlled tanks with wild yeasts only. Malolactic fermentation also starts spontaneously and is complete. Maturing continues in tanks under sur lie conditions. The ageing period is 15-18 months. During the maturation period, the wine is racked once to allow it to air out and each lot is assembled and naturally fining before bottling. The wine is then bottled unfiltered or lightly filtered with diatomaceous earth. It is tight, with almost everything that lovers of great Burgundian whites look for in a Chablis: aromatic vivacity, transparency and layers of tantalising complexity. Very juicy in the nose and on the palate, the fleshy texture and core fruit are present with a fresh minerality, leading to a finish overflowing with oyster shell and ripe grapefruit flavours. The cool white fruit surges in and is very dramatic on the palate for a wine of this level, but seems to be enveloped and caressed by the stony, floral freshness that Moreau's vineyards have given this wine. This wine is old-fashioned but also very modern. A wine with good acidity, fruit and terroir. It is best served with crustacean dishes, fried dishes and white meat dishes. \\about Viticultor 生産者について// モロー・ノーデ Moreau-Naudet Bourgogne Chablis 22.5ha bio 生産量約50%の葡萄はネゴシアンに売却。 2016年に当時の当主ステファン・モローが急逝し、妻のヴィルジニがドメーヌを引き継ぎました。直後にはドメーヌの今後を危ぶむ声もありましたが、欧米での評価は揺るぎませでした。 ギド・デ・メイユール・ヴァン・ド・フランスは最新の2019年版で「ドメーヌの弛まぬ努力は昇格に値する」として、二ッ星への昇格を決めました。モロー・ノーデでは機械が導入されてワインが産業化される以前の栽培方法を行っています。ワインは、はっきりとしたミネラルの中軸がバランスを取り、衝撃的に深みのある純粋な果実味と自然な質感、複雑さ、凝縮感を兼ね備えた見事なまでの独特な個性を備えています。 About 50% of the grapes produced are sold to negociants. In 2016, the then head of the estate, Stéphane Moreau, died suddenly and his wife Virginie took over the estate. Although there were immediate doubts about the future of the estate, its reputation in Europe and the US remained unshaken. In its latest 2019 edition, Guides de Mayeur Vin de France decided to promote the domaine to two stars, as "the unflagging efforts of the estate deserve a promotion". At Moreau Nordet, cultivation practices pre-date the introduction of machinery and the industrialisation of wine. The wines have a superbly distinctive character, with a clear mineral mid-axis that balances and combines pure fruit with shocking depth, natural texture, complexity and concentration.
