All harvested grapes are destemmed and handled with as little crushing as possible. After two weeks of skin contact, the wine was pressed and transferred to ceramic eggs or old oak barrels for three months of aging. The wine is then blended and aged on the lees for 6 months. Very little SO2 added prior to bottling. The young brothers, Damon and Jonathan, who grew up in the area, used their domestic and international experience to take on a new challenge: making natural wine from their own vineyards. The concept behind their winemaking is quite simple: "All quality comes from the vineyard. All the grapes from their own vineyards, which express the terroir of the Clare Valley, are naturally fermented with wild yeasts and produced with minimal human intervention, such as minimal S02 addition, no fining and no filtering. The Clare Valley's terroir is expressed in the fresh, aromatic Riesling and the delicious red wine "The Clare," which gives the drinker a sense of nature's bounty.
